Fruity Couscous

- 9 oz couscous shopping list
- chicken or turkey stock (you can make this from bouillion cubes) shopping list
- juice and zest of 1/2 lemon shopping list
- 3 oz dried cranberries or cherries shopping list
- 3 oz dried, unsulphured apricots, chopped shopping list
- 3 oz dates, chopped shopping list
- 2 oz walnuts or brazil nuts, chopped shopping list
- 4 Tbsp parsley, freshly chopped shopping list
- 2 oranges, peeled and segmented shopping list
- salt shopping list
- Freshly ground black pepper shopping list
- *For the dressing: shopping list
- 6 Tbsp olive oil shopping list
- 2 Tbsp balsamic vinegar shopping list
How to make it
- Prepare dressing by mixing oil and vinegar
- Cook couscous according to package instructions, using chicken or turkey stock in place of water
- After the couscous has cooked, fluff with a fork and mix in the remaining ingredients.
- Stir in the dressing.
- Salt and pepper to taste.
