Broiled Sole Mediterranean Recipe

Ingredients
  • 4 ounces French baguette, cut into 1/2-inch cubes (about 2 cups)
  • Vegetable Oil spray (Olive Oil preferred)
  • 4 Italian Plum Tomatoes, seeded and coarsey chopped
  • 1/2 pound Asparagus Spears, trimmed, cut into 1-inch pieces, tips reserved seperately
  • 1/2 medium Onion, diced
  • 2 tsp. Olive Oil
  • 1 Tbs. fresh Lemon Juice
  • 1/8 tsp. Pepper
  • 4 Sole fillets (about 4-ounces each)
  • 1/2 medium Red Bell Pepper, minced
  • 8 Kalamata Olives, minced

Directions
  1. Preheat the broiler.
  2. Put the bread in a 13X9X2-inch baking pan.
  3. Lightly spray with vegetable oil spray.
  4. Toss the bread gently.
  5. Lightly spray again.
  6. Add tomatoes, asparagus pieces (not the tips), and onion.
  7. Stir to distribute evenly.
  8. With the oven door slightly ajar, broil about 6-inches from the heat for 3 minutes, or until the bread begins to brown.
  9. Stir and broil for 2 minutes.
  10. Meanwhile, in a shallow dish or pie pan, stir together the olive oil, lemon juice, and pepper.
  11. Rinse the sole and pat dry with paper towels.
  12. Dip the sole in the mixture, turning to coat.
  13. Place the sole on the broiled vegetables, overlapping as necessary.
  14. Sprinkle the bell pepper, olives, and asparagus tips over the sole.
  15. Broil for 4 minutes.
  16. Turn off the oven and leave the pan in the oven for 3 minutes, or until the sole flakes easily when tested with fork.
