How to make it

  • Preheat the broiler.
  • Put the bread in a 13X9X2-inch baking pan.
  • Lightly spray with vegetable oil spray.
  • Toss the bread gently.
  • Lightly spray again.
  • Add tomatoes, asparagus pieces (not the tips), and onion.
  • Stir to distribute evenly.
  • With the oven door slightly ajar, broil about 6-inches from the heat for 3 minutes, or until the bread begins to brown.
  • Stir and broil for 2 minutes.
  • Meanwhile, in a shallow dish or pie pan, stir together the olive oil, lemon juice, and pepper.
  • Rinse the sole and pat dry with paper towels.
  • Dip the sole in the mixture, turning to coat.
  • Place the sole on the broiled vegetables, overlapping as necessary.
  • Sprinkle the bell pepper, olives, and asparagus tips over the sole.
  • Broil for 4 minutes.
  • Turn off the oven and leave the pan in the oven for 3 minutes, or until the sole flakes easily when tested with fork.
