Broiled Salmon With Honey And Vermouth Recipe

Yet another recipe from my Weight Watchers cookbook for feeding two people. You can replace the vermouth in this recipe with white wine.

Ingredients
  • 2 tbsp. honey
  • 2 tbsp. dry vermouth or dry white wine
  • 1 1/2 tsp. peeled grated fresh ginger
  • 1 1/2 tsp. Dijon mustard
  • salt and pepper
  • 2 (6-ounce) salmon fillets
  • Cooking spray

Directions
  1. Combine first 6 ingredients in a small bowl; stir with a whisk.
  2. Place salmon on a broiler pan coated with cooking spray; brush with half of the honey mixture.
  3. Broil 8 minutes or until fish flakes easily when tested with a fork, basting frequently with remaining honey mixture.
  4. Serves two. 1 serving = 6 points.
