Broiled Snapper And Pear Bruschetta

- 1 pound skinless red snapper fillets shopping list
- 4 large slices sourdough bread (about 2-ounces each and about 3/4-inch thick) shopping list
- 4 medium pears, thinly sliced shopping list
- juice of 1 small orange shopping list
- 1 Tbl. olive oil (Extra Virgin preferred) shopping list
- 2 tsp. chopped fresh rosemary shopping list
- 1/8 tsp. kosher salt shopping list
- 1/8 tsp. pepper shopping list
- 1 large red bell pepper, finely diced shopping list
- 2 Tbs. sliced almonds shopping list
How to make it
- Preheat the broiler.
- Rinse the fish and pat dry with paper towels.
- Cut fish into 1/2-inch pieces. Set aside.
- Put the bread on a baking sheet.
- Broil about 6-inches from the heat for 4 to 6 minutes, or until golden on both sides, turning over halfway through the broiling time.
- Remove the bread from the oven.
- Cover each slice with a layer of overlapping pears.
- Be sure the pears overhang the bread by 3/8 to 1/2-inch, or the sides of the bread will burn.
- Broil for 5 to 7 minutes, or until the pears begin to bubble and brown.
- Meanwhile, in a medium bowl, stir together the orange juice, oil, rosemary, salt, and pepper.
- Stir in the fish, bell pepper, and almonds.
- Spoon over the browned pears.
- Broil for 4 to 6 minutes, or until the fish flakes easily when tested with a fork.
