This recipe is from Meena Patak's Indian Cooking for Family and Friends. Although this spicy dish is served in a garam masala cream sauce, it is not heavy. Quite elegant with basmati rice, dahl and some naan bread.

Ingredients
  • 2 tbsp vegetable oil
  • 1/2 tsp cumin seeds
  • 2 bay leaves
  • 1 onion, chopped
  • 1 tsp turmeric
  • 2 green chillies, chopped
  • 1/2 tsp chilli powder
  • 2 tomatoes, diced
  • 350 g raw prawns, peeled and cleaned
  • 150 g spinach, chopped
  • 1 1/2 tsp garam masala
  • 2 tbsp light cream
  • salt and pepper
  • 2 tbsp cilantro, chopped

Directions
  1. Heat oil and add cumin seeds and bay leaves.
  2. When you hear a crackling sound of the seeds bursting, add onion and saute for 5 minutes.
  3. Next add ginger, garlic, turmeric and green chillies, chilli powder and tomatoes.
  4. Lightly saute for a few minutes.
  5. Add prawns and cook until opaque.
  6. Next add spinach and saute until wilted.
  7. Mix garam masala with cream and pour into pan.
  8. Salt and pepper to taste.
  9. Remove bay leaves.
  10. Add chop cilantro and serve with basmati rice.
