Party Size Spectacular Strawberry Mousse Cake

- Basic White cake for 3, 10 inch layers: shopping list
- 3 1/2 cups flour shopping list
- 4 tsp baking powder shopping list
- 2 sticks butter or margarine at room temperature shopping list
- 2 cups sugar shopping list
- 1 tsp vanilla shopping list
- 1 cup milk shopping list
- 8 egg whites ( save yolks for something else, no yolks are used in this shopping list

- 1/2 cup sugar shopping list
- 1/2 cup orange liquor shopping list
- Strawberry Mousse: shopping list
- 4 cups strawberries shopping list
- ( 2 cups for mousse , save 2 cups for cake and decoration ) shopping list
- 3/4 cup powder sugar shopping list
- 1 pkt unflavored gelatin ( 2 1/4 tsp ) shopping list
- 1 1/2 Tbs. lemon juice shopping list
- 1 1/2 cups heavy cream shopping list
- 3 egg whites shopping list
- Joan's Fluffy Cream Cheese Frosting: shopping list
- 3 pkg ( 8 oz ) cream cheese shopping list
- 1/2 cup heavy cream shopping list
- Enough powder sugar to taste shopping list
- Garnish shopping list
- extra strawberries shopping list
- chocolate covered strawberries ( optional ) shopping list
How to make it
- Make cake:
- Cream butter and sugar until fluffy, add vanilla and blend smooth.
- Mix flour and baking powder and add alternating with milk to creamed mixture.
- Beat whites until stiff not dry and fold into mixture.
- Divide mixture into 3, 10 inch greased and floured ( lined with wax paper ) cake pans.
- Bake in a 375F oven about 20 minutes or until done.
- Cool in pan 10 minutes and remove to rack to cool.
- Make glaze: heat sugar and liquor to a boil and remove from heat.
- Make mousse.
- Puree 2 cups of strawberries and blend in powder sugar.
- Dissolve gelatin in lemon juice.
- Heat puree with gelatin and lemon juice until gelatin is dissolved.
- Remove from heat to cool.
- Whip cream to soft peaks and fold into cooled puree.
- Beat whites stiff and not dry and blend into puree mixture.
- Assemble cake.
- Brush tops of cooled cake layers with some of the cooled glaze.
- Place a layer on serving plate and spread with some mousse.
- Add on some slice strawberries in a single layer.
- Place on second layer, spread on some mousse, add on some strawberries.
- Add top layer, spread on some mousse and add some sliced strawberries.
- If any mousse slides down the sides don't worry- just spread around sides of cake..
- Chill cake about an hour. Make frosting.
- Beat cream cheese, heavy cream and sugar to taste.
- Carefully spread and frost entire cake. Garnish with fresh whole berries and some chocolate covered berries.
- Chill very well.
- Best served the following day when cake chills and flavors blend .
- Note 1: one will have some extra mouse, glaze and frosting which can be saved and used as desired.
- Makes a tall delicious cake.
- Very pretty when cut into as the mousse and layers of berries show.
- Chill uneaten portions though.
- Do not freeze .
- Note 2:
- yolks may be frozen separately in ice cube trays.
- Defrost and use the yolks in things such as custards, puddings, yeast breads, or whenever you may need egg yolks.
