This is a batter that can be used to cook Salmon, Mahi Mahi, Swordfish, Orange Roughy. I used macadamia nuts and tried it on Mahi Mahi. Delicious.

Ingredients
  • Mix together and set aside:
  • 1/4 c. flour
  • 1 tsp salt
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp sugar
  • In blender, puree till finely crushed or small chunks, whatever is preferred, and set aside:
  • 2 c. macadamia nuts, cashew, pistachio or any other nut of choice.
  • 1/4 c. coconut
  • Whisk together:
  • 2 large eggs
  • splash of milk.

Directions
  1. Dip fish in egg, flour and nut mixture and fry.
