How to make it

  • Slice finely (really!) about 1g Ginger, 1 clove of garlic, 1 chilli and 1 Onion
  • Whack some oil in a decent pot, and cook the garlic, chilli, onion and ginger over a low heat for 5-10 minutes (let the onions go clear).
  • Meanwhile, quarter the mushrooms, then add to the pot for 3 or 4 minutes.
  • Bring the heat up, then add the stock (bit by bit) and bring to the boil.
  • Add 1.5 to 2 desert spoons of soy sauce.
  • Add a good (and I mean _good_!) whack of black pepper, and cook for 10 minutes or so, making sure the mushrooms are cooked.
  • Meanwhile, prepare the Pak Choi (trim, and slice lengthwise), and snap the rice noodles in half (a handful is more than enough).
  • Add the noodles (according to pack times, these should take 2-4 minutes to cook).
  • At the same time, cut a slice of lime & squeeze it in.
  • A minute or so later, add the Pak Choi.
  • Simmer for 2-3 minutes.
  • Serve!

    Being honest, I vary the amount of stock added based on what it looks like in the pot, but hopefully it'll work for you :). I love soup!
