How to make it

  • Bring a medium sauce pan of water to a rapid boil over high heat
  • Plunge spinach leaves into water just until wilted, approx 10 secs.
  • Rinse under cold running water and drain well.
  • Transfer spinach and parsley to a blender or food processor.
  • Add the mayo, sour cream, lemon juice and 1/4 ts salt to the mixture in the blender.
  • Blend or process until smooth.
  • Chill for at least 30 minutes up to 12 hours
  • Preheat broiler.
  • Sprinkle the salmon steaks with the remainder of salt.
  • Place on broiler pan and broil 6" from heat, turning once just until cooked through, approx 8 minutes.
  • Transfer to serving plate and spoon the sauce over the salmon steaks or could serve the sauce on the side depending on preferences.

    I've bookmarked this recipe and hope to try it soon. I love salmon and am trying new ways to enjoy it. Also, I love your black kitty photo. . . looks like my Isis!
