Salmon with Garden Sauce

- 1 cup fresh parsley leaves shopping list
- 2 cups fresh spinach leaves, well washed shopping list
- 1/2 cup mayo shopping list
- 1/3 cup sour cream shopping list
- 1 Tbls fresh lemon juice shopping list
- 3/4 ts salt, divided shopping list
- 4 salmon steaks, 6 ounces each and about 3/4" thick shopping list
How to make it
- Bring a medium sauce pan of water to a rapid boil over high heat
- Plunge spinach leaves into water just until wilted, approx 10 secs.
- Rinse under cold running water and drain well.
- Transfer spinach and parsley to a blender or food processor.
- Add the mayo, sour cream, lemon juice and 1/4 ts salt to the mixture in the blender.
- Blend or process until smooth.
- Chill for at least 30 minutes up to 12 hours
- Preheat broiler.
- Sprinkle the salmon steaks with the remainder of salt.
- Place on broiler pan and broil 6" from heat, turning once just until cooked through, approx 8 minutes.
- Transfer to serving plate and spoon the sauce over the salmon steaks or could serve the sauce on the side depending on preferences.
