Barley Mushroom Bake Recipe

Ingredients
  • 3 T. oil
  • 1/2 cup chopped onion
  • 1/2 cup uncooked pearl barley
  • 3 cups chicken broth
  • 4 cups sliced fresh mushrooms
  • 3 T. dry sherry wine (optional, I didn't use the sherry)
  • 3 T. toasted sliced almonds

Directions
  1. Heat oven to 350.
  2. Lightly oil a 1 quart baking dish.
  3. Heat 1 T. oil in large skillet. Add onion and cook over medium high heat 3 to 4 minutes. Stir often until tender.
  4. Add barley, cook, stirring often, until barley is golden; transfer to prepared baking dish.
  5. Add chicken broth.
  6. Bake uncovered 30 minutes.
  7. Meanwhile, heat remaining 2 T. oil in same skillet.
  8. Add mushrooms and cook over medium high heat. Stir occasionally 5 to 7 minutes until liquid from mushrooms has evaporated and they are lightly golden.
  9. Remove from heat and sprinkle with sherry and stir into barley mixture. Continue baking uncovered 45 minutes or until broth is absorbed and barley is tender.
  10. Sprinkle with almonds.

This sounds great. A wonderful way to add whole grains into the diet and a veggie to boot.

Very similar to a dish I make, but I like this better. The addition of mushrooms gives it just the right finish. You got a 5 from me.
