A light honey- rose flavored jelly

Ingredients
  • 1/2 lb rose petals
  • 1 1/4 c sugar
  • 3 T lemon juice
  • 3/4 lb raw unfiltered honey
  • small jelly jars

Directions
  1. Simmer petals in small amount of water till petals are tender. Add the sugar, honey and lemon juice. Cook gently until mixture is the consistency of a thick syrup.
  2. Allow mixture to cool slightly then pour into sterile jelly jars and seal.
