How to make it

  • Place sugar cookie dough into pie pans and make a crust, bake as directed. When finished baking, remove from oven and press cookie crust down into pan. Set aside to cool. Combine sugar, cornstarch, and water in a saucepan. Cook and stir on medium heat until it comes to a boil and is clear. Remove from heat. Add gelatin and stir until dissolved. Add frozen raspberries and set aside. In another bowl mix softened cream cheese, powdered sugar, vanilla together. Beat until smooth. Beat in the whipping cream. Mix the raspberry mixture with the cream mixture. Put the pie filling into the cooled crusts. Cover and refridgerate for a few hours. Makes 2 pies.
