How to make it

  • Heat the oil in a medium non-stick pan. Gently fry the onion until brown.
  • Add the ginger and garlic pastes and mix. Next add the cumin, coriander, chili, salt and a little water. Cook for about a minute.
  • Increase the heat and add the chicken. Brown for 2-3 minutes, then stir in the sour cream and evaporated milk one tablespoon at a time. Incorporate the cream and milk well into the chicken, tossing to coat. Add hot water if necessary. Simmer until the chicken is tender, about 4 minutes. Add the paprika and mix well. The gravy should be reduced by now.
  • Plate and sprinkle with fresh coriander. Serve with roti, naan or any other Indian flatbread, and lemon.

    Nowhere near enough spices to cut through all the sour cream and evaporated milk. Also, better to use freshly blitzed cumin seed and coriander seed for maximum fragrance and pungency. I used red chili flakes and they were apparent as some heat in the sauce, but only they, and the cilantro leaves (fresh "cumin") kept this from presenting like a bland Korma. Served it with cous cous and courgette wedges baked in olive oil, garlic and herbs with grated parmesan. I'd rather marinate the chicken to really imbue it with flavour.

    well add a bit of pepper for taste it really tastes great n instead of red chilli can use pepper will not too spicy as most of the people will not like spicy food n i'll definitely try it as am going home for a week so will get sometime to cook n eat thnks
