Sour Cream Blueberry Pancakes

- Pancakes: shopping list
- 2 cups all-purpose flour shopping list
- 1/4 cup sugar shopping list
- 4 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 2 eggs shopping list
- 1 1/2 cups milk shopping list
- 1 cup sour cream shopping list
- 1/3 cup butter-melted shopping list
- 1 cup fresh or frozen blueberries shopping list
- Topping: shopping list
- 1/2 cup sugar shopping list
- 2 tablespoon cornstarch shopping list
- 1 cup cold water shopping list
- 4 cups fresh or frozen blueberries shopping list
How to make it
- Pancakes:
- In a large mixing bowl,combine flour,sugar,baking powder,and salt.
- Beat together eggs,milk,sour cream,and butter.
- Stir into flour mixture. Mix until just combined.
- Fold in blueberries.
- Pour batter by 1/4 cupfuls onto a greased hot griddle.
- Turn when bubbles form on top of pancakes.
- Cook until golden brown on both sides.
- Topping:
- In a large saucepan,combine sugar,cornstarch,and water until smooth. Add blueberries.
- Bring to a boil over medium heat.
- Cook for 2 minutes or until thickened,stirring constantly.
- Remove from heat and server over pancakes.
