Black Bean Dip in Layers

- 1 15-ounce can black beans, rinsed and drained shopping list
- 1 4-ounce can chopped ripe olives, drained shopping list
- 1 small onion, finely chopped (¼ cup) shopping list
- 1 clove garlic, finely chopped shopping list
- 2 tablespoons vegetable oil shopping list
- 2 tablespoons lime juice shopping list
- ¼ teaspoon salt shopping list
- ¼ teaspoon crushed red pepper shopping list
- ¼ teaspoon ground cumin shopping list
- 1/8 teaspoon pepper shopping list
- 1 8-ounce pkg. cream cheese, softened shopping list
- 2 hard-cooked eggs, chopped shopping list
- ¼ cup finely chopped red bell pepper shopping list
- 1 medium green onion, sliced shopping list
- tortilla chips shopping list
How to make it
- Mix beans, olives, chopped onion, garlic, oil, lime juice, salt, crushed red pepper, cumin and pepper.
- Cover and refrigerate 1 to 2 hours to blend flavors.
- Spread cream cheese on serving plate.
- Spoon bean mixture evenly over cream cheese
- arrange eggs on bean mixture in ring around edge of plate.
- Sprinkle bell pepper and green onion over bean mixture.
- Serve with tortilla chips.
