Vegetable Garden Cake

- 3 eggs shopping list
- 1 cup applesauce (or 1/2 cup applesauce, 1/2 cup oil) shopping list
- 1 cup sugar (or substitute Splenda) shopping list
- 1 1/2 cups shredded zucchini shopping list
- 1 cup shredded carrots shopping list
- 2 - 2 1/2 cups flour shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon vanilla shopping list
- 1/2 cup ground almonds shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/2 teaspoon nutmeg shopping list
How to make it
- Mix together dry ingredients
- Mix together moist ingredients
- Add wet ingredients to dry ingredients
- Pour all into a 9 X 13" pan
- Bake at 350 degrees F for 1 hour, or until cake tests done
- This cake tastes very good with standard cream cheese icing, if you wish:
- Mix together 1/4 cup butter, 3/4 cups cream cheese, 1/3 cup crushed pineapple and 2 cups of icing sugar. Spread on cooled cake.
