Ingredients
  • One 5-8 lib young chicken cut up in smaller pieces by dividing the breast in two
  • Tomato Paste 2 cans Hunt or Contindida
  • One 12.5 Ounce can diced tomatoes
  • Garlic powder
  • onr half bag of seasonings ( onions, celery etc ) Frozen
  • One tABLESPOON eXTRA vIRGIN oLIVE OIL FOR BROWNING THE CHICKEN
  • Tony chachere's Creole seasoning
  • Tony Chacere's Instant Roux mix
  • Dab of sugar
  • Dab opf parsley

Directions
  1. Clean AND CUT UP CHICKEN TO YOUR TASTES .iLIKE MINE SPLIT INTO EATABLE SIZE PIECES
  2. sEASON cHICKEN W ITH tONY CHACERE'S CREOLE SEASONING MIX
  3. sTART BROWNINGG THE CHICKEN IN A LARGE POT ON STOVE OVER MEDIUM HEAT
  4. sPRINKLE tONY CHACHERE'S iNSTANT ROUX MIX OVER THE CHIKEN PIECES dO BOLTH SIDES OF CHICKEN
  5. wHEN BROWN REMOVE FROM HEAT AND SET aside
  6. After all chicken is browned and seaoned add two small cans of Contindina or Hunts tomato paste and the diced tomotes to the pot
  7. Add the frozen Seasoning mix I use One half the bag
  8. Get all browned and ready for the garlic powder or fresh minced to taste we love lotsof garlic and this dish calls for it
  9. Pour in 24 OZs Sterlized water or chicken Broth I have used both
  10. Sprinle a dab of sugar on top, This tKES THE NIP OUTOF THE TARTNESS OF TOMATOS
  11. Cover bring to boil
  12. Lower heat to simmer and let cook till chicken is tender and done thru and thru
  13. I cook mine at least two hours tODAY ITS BEEN S IMMERING FOR THREE YoU HAVE TO JUDGE iFITS A "bIG bIRD" COOK LONGER
  14. Serve over rice with Petit Pois Peas as side veggie
  15. I guarntee you will have a great Cajun dish with a few modern little helpers Ie SeaSoning mix and God Bless Tony Charchere
