Shrimp Cakes Recipe
I found this recipe in real simple magazine, and I think I'll try it tonight!

Ingredients
  • 1 1/2 lbs. shrimp, peeled and devained
  • 1 jalapeno, chopped and seeded
  • 2 tsp orange zest
  • 1/4 cup cilantro, chopped
  • pepper, garlic powder, and any other seasonings you would like
  • 1/4 cup flour (I use whole wheat)-plus seasonings
  • 1 Tbsp. olive oil

Directions
  1. Put shrimp in food processor until it makes paste - you can do this in batches.
  2. Mix in the next 3 ingredients and season to your liking.
  3. Form into 8 patties.
  4. At this point, if you are not ready to eat really soon you can put the shrimp patties on a baking sheet, covered. You can keep there for a day or freeze them for 3 months.
  5. Heat your oil to medium heat.
  6. Now you dredge them in your seasoned flour.
  7. Cook patties for 2 minutes per side.
