Stuffed Tomatoes Recipe
This is a great dish -- very light and filling.

Ingredients
  • Several large tomatoes (one for each person you intend to feed)
  • 1-2 cups brown rice, cooked
  • 1 cup of chopped spinach
  • 6-8 oz. Feta cheese
  • mozzarella cheese

Directions
  1. Pre-heat oven to 350
  2. Slice the tops off the tomatoes and discard.
  3. Remove the insides of each tomato, creating a shell.
  4. Keep the tomato pulp and mix with the rice, spinach, and feta cheese.
  5. Fill each tomato shell with the rice mixture.
  6. Put the tomatoes in a glass cooking dish or on a baking pan and place in oven, cooking for 15 minutes.
  7. Top the tomatoes with the mozzarella cheese and return to oven, baking until cheese is melted.
  8. If you have leftover rice mixture, place it on plate and serve tomato on top of it.
