How to make it

  • Pre-heat oven to 350
  • Slice the tops off the tomatoes and discard.
  • Remove the insides of each tomato, creating a shell.
  • Keep the tomato pulp and mix with the rice, spinach, and feta cheese.
  • Fill each tomato shell with the rice mixture.
  • Put the tomatoes in a glass cooking dish or on a baking pan and place in oven, cooking for 15 minutes.
  • Top the tomatoes with the mozzarella cheese and return to oven, baking until cheese is melted.
  • If you have leftover rice mixture, place it on plate and serve tomato on top of it.

    It's a good filling vegan dish. Could use some salt in the stuffing.
