Stuffed Tomatoes

- Several large tomatoes (one for each person you intend to feed) shopping list
- 1-2 cups brown rice, cooked shopping list
- 1 cup of chopped spinach shopping list
- 6-8 oz. feta cheese shopping list
- mozzarella cheese shopping list
How to make it
- Pre-heat oven to 350
- Slice the tops off the tomatoes and discard.
- Remove the insides of each tomato, creating a shell.
- Keep the tomato pulp and mix with the rice, spinach, and feta cheese.
- Fill each tomato shell with the rice mixture.
- Put the tomatoes in a glass cooking dish or on a baking pan and place in oven, cooking for 15 minutes.
- Top the tomatoes with the mozzarella cheese and return to oven, baking until cheese is melted.
- If you have leftover rice mixture, place it on plate and serve tomato on top of it.
