Stuffed Tomatoes

    Recipe by Mellablue: Stuffed Tomatoes/saved
    Author is a comedian, "If you have leftover rice mixture", of course there will be left over stuffing.
    Didn't know whether to use fresh or wilted spinach. Went with wilted. Eight ounces fresh makes about a cup of wilted.
    Used some left-over white coconut rice.
    It's a good stuffed tomato recipe. Personally I think the stuffing will not suffer from the addition of salt. Mother likes it just the way it is.
    Plated it with some baked beans for an almost vegan lunch.

    Rocks here too but I've some big ones. Figured the heat would soften them up some. My tomato plants are just about ready to go into the ground.

    Coconut rice sounds interesting in a tomato! Yes I would have used wilted spinach too, makes more sense. Lol on rock tomatoes! The roma one's around here aren't too bad but the big one's are SAD! Yes can't wait until the garden tomatoes start popping up!
