Fancy Potato Pancakes Recipe

A tasty spin on potato cakes.

Ingredients
- 4 or 5 cups mashed potato
- 2 tablespoons of baking powder
- 1 or 2 eggs
- 1/4 cup of milk or butter milk
- Flour
- 3 (skinny or bunched) green onions chopped into small pieces
- (I use 3 but you can add more or less of the onion)
- 1/2 cup grated chedder or Spicy Jack cheese
- Oil, shortening, butter or margirine
Directions
- Mix ingredients together adding enough flour to make into patties.
- Do not make them too thick as they will rise during cooking.
- Fry until done, turning once or twice. (Cooked just like you would a regular pancake).
- Do not let skillet get too hot.
- You may also add bits of cooked bacon that have been smashed into bits.
