How to make it

  • marinate the meat strips in yoghurt, garlic paste, salt, lemon juice and garam masala for 2 hours
  • heat oven to 150 degrees
  • heat oil in a frying pan and add meat with marinade, stir fry for about 10 minutes
  • add tomato puree, cumin, chilli and fenugreek
  • place into casserole dish, cover, cook in oven for about 1 1/2 hours
  • garnish if required, serve with rotis, naan or rice

    Oops - yes, sorry. Very lazy of me. Originally this was cooked on a stove top but I worry about getting the mutton tender enough, so adapted it for the oven, though if the meat's ok I think you could do it either way. Very highly recommended this one, it's my favourite curry so far.
