Fudge Ripple Layer Cake

- Cake: shopping list
- 1/2 cup shortening shopping list
- 1 1/2 cups sugar shopping list
- 2 large eggs shopping list
- 1 2/3 cup all purpose flour shopping list
- 2/3 cup cocoa shopping list
- 1 1/2 teaspoons baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1 1/2 cup buttermilk shopping list
- 1 teaspoon vanilla shopping list
- Filling: shopping list
- 1 8oz package cream cheese-softened shopping list
- 2 tablespoons butter-softened shopping list
- 1 tablespoon cornstarch shopping list
- 1 14oz can sweetened condensed milk shopping list
- 1 large egg shopping list
- 1 teaspoon vanilla shopping list
- Frosting: shopping list
- 2/3 cup butter-softened shopping list
- 5 3/4 cups sifted powedered sugar shopping list
- 1 1/3 cups cocoa shopping list
- 3/4 cup milk shopping list
- 1 teaspooon vanilla shopping list
- 3/4 chopped walnuts or pecans-optional shopping list
How to make it
- Cake:
- Preheat oven to 350 degrees.
- Grease and flour two 9" round cake pans. Set aside.
- Beat shortening at medium speed until fluffy. Gradually add sugar,beating well.
- Add eggs,1 at a time,beating well after each addition.
- Combine flour,cocoa,baking soda,and salt. Add to shortening mixture alternatively with buttermilk,beginning and ending with flour.
- Turn mixer to low after each addition for even blending.
- Stir in vanilla. Pour batter into prepared pans. Set aside.
- Filling:
- Beat cream cheese,butter,and cornstarch together until creamy.
- Gradually add sweetened condensed milk,beating well.
- Add egg. Beat well.
- Stir in vanilla. Spoon mixture evenly over batter in both pans. DO NOT STIR.
- Bake for 40 minutes or until inserted toothpick comes out clean.
- Cool layers in pans for 10 minutes then turn out onto wire racks.
- Cool completely.
- Frosting:
- Beat butter at medium speed until creamy.
- Combine powdered sugar and cocoa and add to butter alternatively with milk beginning and ending with sugar.
- Beat until mixture reaches spreading consistency.
- Stir in vanilla. Frost layers.
- Sprinkle with nuts of desired.
