Peachy Cornbread Recipe
Another of my variations: moist and subtly sweet

Ingredients
  • 2 cups yellow cornmeal, I prefer stone ground
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 eggs
  • 8 oz plain or vanilla or peach yoghurt
  • 1/2 cup oil
  • 1/2 of a 21 oz can of peach pie filling

Directions
  1. Mix dry ingredients well.
  2. Mix wet ingredients together
  3. Beat both mixtures until well blended.
  4. Place in a greased 8 x 10 inch biscuit pan.
  5. Mixture will fill pan almost full.
  6. Bake 400F until golden and done, about 25 minutes or so.
  7. Cut when warm
