Bay Shrimp Salad Recipe
This is a quick and easy side salad or an absolutely great little lunch - either way you can top it with your favorite dressing or use the little helpful tip for a fresh dressing!!!

Ingredients
  • 1/2 Iceberg Lettuce, torn into bite-size pieces
  • 1 cup Green Leaf Lettuce, torn into bite-size pieces
  • 12 oz. Cooked Bay Shrimp, rinsed
  • 1/2 cup Cucumber, julienne
  • 1/4 cup Radish, julienne
  • 1/4 cup Carrots, julienne
  • 1/4 cup Celery, julienne
  • 2 oz. Ginger Dressing (See Tip)
  • Fresh Lemon wedges for garnish
  • 2 Cherry Tomatoes for garnish

Directions
  1. Simply prepare salad ingredients as directed, toss, and serve with a single lemon wedge and cherry tomato for garnish.
  2. Tip: To prepare your own Ginger Salad Dressing from scratch, blend together 1 1/2 teaspoon finely chopped ginger root, 1/4 cup chopped onion, 1/4 cup chopped carrot, and 2 tablespoons celery, chopped until very fine. Add 1/2 cup soy sauce, 1 cup peanut oil, and 1/2 cup mild vinegar. Add freshly ground black pepper if desired. Shake to mix and well before use. Best made a day ahead for flavors to meld.

Hi Raven, Haven't seen you around for a while.. This salad sounds great. Such a nice change from the heavy mayonaise based seafood salads. This will be on my short list to try for sure. I would definitely use your home made dressing. That is what makes it. Hope you are having a great weekend... Jim
