Alpha And Omega Pasta Sauce Recipe
This is the only pasta sauce you should ever need, hence the name. Very little prep time, so you can 'set it and forget it!' The longer this sauce reduces, the better. I haven't been able to wait longer than 2 hours, maybe you will!

Ingredients
  • 6-7 cloves garlic
  • Meat- .5-.6 lb ground beef, or 1 pkg of hot Italian sausage
  • 28 oz all purpose tomato sauce - I use Dei Fratelli
  • 1 cup red table wine- Carlo Rossi for me
  • 1/4-1/2 white onion
  • basil
  • rosemary
  • oregano
  • salt
  • pepper
  • extra virgin olive oil

Directions
  1. Mince garlic and chop onion
  2. Crumble and start to brown meat over medium heat
  3. In a large pot over medium heat, drizzle 2 tbsp olive oil, then add garlic and onion.
  4. Wait until garlic is brown and onions are sweet.
  5. When meat is finished, drain on an old newspaper or paper towel.
  6. Add tomato sauce,meat, wine, and spices to taste (I do 1.5-2 tbsp each) to pot with garlic and onions.
  7. Stir until it looks uniform.
  8. Simmer UNCOVERED for at least an hour, preferably 2 or more, stirring occasionally.
  9. And of course, make some pasta once you cannot wait any longer. I do either a penne or linguine, depending on the meat, mood, and moon phase.

Lovely, sounds like mine except that I put a touch of sugar in mine to cut down slightly on the acidity of the tomato sauce. Great post!
