  • 1 POUND GROUND LEAN SIRLOIN OR CHUCK
  • 1 POUND BULK HOT SAUSAGE
  • 1 CUP CHOPPED ONION
  • 1 LARGE HOT JALAPENO PEPPER FRESH...FINELY CHOPPED
  • 2 CLOVES OF GARLIC, MINCED
  • SALT TO TASTE
  • 2 -- 8 OUNCE CANS OF TOMATO SAUCE
  • 2 CUPS WATER
  • 1 TABLESPOON CUMIN
  • 1 TABLESPOON PAPRIKA
  • 2 TABLESPOON CHILI POWDER
  • 1 TEASPOON OREGANO
  • 1 BAY LEAF
  • 2 TABLESPOONS CAYENNE PEPPER
  • 2 TABLESPOONS CORNSTARCH
  • 1/4 CUP OF WATER
  • 1 - 15 OUNCE CAN DARK RED KIDNEY BEANS, DRAINED
  • FRESH CILANTRO LEAVES FOR GARNISH ( OPTIONAL)

Directions
  1. COOK GROUND SIRLOIN, SAUAGE, JALAPENO AND GARLIC IN A LARGE SKILLET OR DUTCH OVEN UNTIL MEAT IS BROWNED.
  2. STIR IN NEXT .....9 ....INGREDIENTS.
  3. COOK, COVERED OVER LOW HEAT FOR 1 HOUR AND 30 MINUTES, STIRRING OCCASIONALLY.
  4. SKIM OFF FAT
  5. MIX CORNSTARCH WITH 1/4 CUP WATER, ADD TO CHILI, MIX WELL, ADD BEANS, COVER AND COOK ANOTHER 30 MINUTES OVER LOW HEAT, REMOVE BAY LEAF;
  6. AND SERVE WITH TORTILLA CHIPS OR CRACKERS
