Penne alla Vodka

- 1(28oz)can tomatoes,drained,liquid reserved shopping list
- 2Tbs olive oil shopping list
- 1/2 small onion,minced(about 1/4c) shopping list
- 1Tbs tomato paste shopping list
- 2 med.cloves garlic,minced or through a press(2tsp) shopping list
- 1/4-1/2 tsp. red pepper flakes shopping list
- table salt shopping list
- 1/3c vodka(if possible,use premium vodka shopping list
- 1/2c heavy cream shopping list
- 1lb. penne pasta shopping list
- 2Tbs minced fresh basil leaves shopping list
- grated parmesan cheese for serving shopping list
How to make it
- Puree half of the tomatoes in food processor until smooth. Dice remaining tomatoes into 1/2" pieces,discarding cores. Combine pureed and diced tomatoes in liquid measure cup!should have about 12/3c). Add reserved liquid to make 2 cups.
- Heat oil in large saucepan over mrd. heat till shimmering. Add onion and tomato paste and cook,stirring occasionally,until onions are light golden around the edges,about 3 mins. Add garlic and pepper flakes;cook,stirring constantly,until fragrant,about 30 seconds.
- Stir in tomatoes and 1/2tsp. salt Remove pan from heat and add vodka. Return pan to heat at med-high and simmer briskly until alcahol is cooked off,8 to 10 mins;stir frequently and lower heat to med. if simmering becomes too vigorous. Stir in cream;cook till hot,about 1 min.
- Meanwhile bring 4 qts. water to boil in large dutch oven over high heat. Add 1Tbs. salt and pasta. Cook till just shy of al dente,drain pasta,reserve1/4c cooking water and transfer pasta back to dutch oven. add sauce to pasta and toss over med. heat till pasta absorbs some of sauce,1-2 mins.,adding reserved cooking liquid if sauce is too thick. Stir in basil and adjust seasoning with salt. Divide among pasta bowls and serve immediately,passing parmesan cheese seperately.
