How to make it

  • Heat oil in large pot then add onions and garlic.
  • Cook until onions are soft but not browned over medium heat.
  • Add tomatoes, tomato juice, broth, pepper, cumin and chili powder.
  • Bring to boil and simmer 30 minutes then add corn and cook 15 minutes longer.
  • Mix cornmeal and water together and while stirring continuously add to soup.
  • Heat through 5 minutes then ladle into bowls and sprinkle with cheese and corn chips.
