Southwest Corn Soup

- 1 tablespoon oil shopping list
- 1 medium onion diced shopping list
- 2 cloves garlic minced shopping list
- 1 can tomatoes chopped shopping list
- 32 ounces spicy tomato juice shopping list
- 4 cups chicken broth shopping list
- 1/8 teaspoon pepper shopping list
- 1/2 teaspoon cumin shopping list
- 1/2 teaspoon chili powder shopping list
- 11 ounce can white corn shopping list
- 1/3 cup corn meal shopping list
- 1/2 cup cold water shopping list
- 4 ounces grated pepper jack cheese shopping list
- Crushed corn chips shopping list
How to make it
- Heat oil in large pot then add onions and garlic.
- Cook until onions are soft but not browned over medium heat.
- Add tomatoes, tomato juice, broth, pepper, cumin and chili powder.
- Bring to boil and simmer 30 minutes then add corn and cook 15 minutes longer.
- Mix cornmeal and water together and while stirring continuously add to soup.
- Heat through 5 minutes then ladle into bowls and sprinkle with cheese and corn chips.
