How to make it

  • Melt butter then whisk in flour and cook 5 minutes being carefully not to brown.
  • Beat egg whites with cream of tartar until firm then stir 1/4 into mixture in pan.
  • Fold in remaining egg whites then fold in 1 cup cheese and chopped spinach.
  • Arrange crepes on counter and on each place 1 slice ham then gently spoon filling down center.
  • Loosely fold the two sides of crepe over filling and place seam side down in buttered dish.
  • Sprinkle with remaining cheese then bake at 375 for 25 minutes.
  • Should be served right out of the oven.
