Beef casserole with tomato dumplings

- 600g lean beef chuck steak, cut into cubes shopping list
- 1 onion , chopped shopping list
- 2 celery sticks, chopped shopping list
- 200g mushrooms, quartered shopping list
- 1 cup beef stock shopping list
- 2tbls garlic and herb tomato paste shopping list
- 1 tbls plain flour shopping list
- 1 tbls dried thyme shopping list
- 11/2 cups self raising flour shopping list
- 40g reduced fat spread shopping list
- 20g sun dried tomatoes [ not in oil], soaked in boiling water drained and chopped. shopping list
- 1/2 cup skimmed milk shopping list
- 1tbls fresh flat lef parsley chopped shopping list
- 1 bunch wild rocket leaves to serve shopping list
How to make it
- Preheat oven to 170c . Spray a large non-stick fry pan with oil and heat on high.cook the beef for 4m until browned. Transfer to a 1.5l [6cup] casserole dish.
- Add onion, celery and mushrooms, cook stirring, for 5m until soft. Combine tomato past and plain flour in a small bowl. Add to onion mix, stirring continuously Cook for 1m. add the stock and thyme. Stir to combine
- Spoon oin mix into cassorle dish,Stir to combine. Cover tightly. Bake for 1n 30 min
- Sift the self raising flour into a large bowl. Using your finger tips, rub in the spread until the mix resembles fine breadcrumbs.Stir in sun dried tomatoes and parsley. Make a well in centre.. Pour in the milk. Using a round bladed knife mix until a sticky dough forms
- Drop 1 tbls dollop's of mix evenly over casserole to cover. Bake un covered for 20m until dumplings are golden
- Serve wth the rocket leaves
