How to make it

  • Preheat oven to 170c . Spray a large non-stick fry pan with oil and heat on high.cook the beef for 4m until browned. Transfer to a 1.5l [6cup] casserole dish.
  • Add onion, celery and mushrooms, cook stirring, for 5m until soft. Combine tomato past and plain flour in a small bowl. Add to onion mix, stirring continuously Cook for 1m. add the stock and thyme. Stir to combine
  • Spoon oin mix into cassorle dish,Stir to combine. Cover tightly. Bake for 1n 30 min
  • Sift the self raising flour into a large bowl. Using your finger tips, rub in the spread until the mix resembles fine breadcrumbs.Stir in sun dried tomatoes and parsley. Make a well in centre.. Pour in the milk. Using a round bladed knife mix until a sticky dough forms
  • Drop 1 tbls dollop's of mix evenly over casserole to cover. Bake un covered for 20m until dumplings are golden
  • Serve wth the rocket leaves
