Beef Casserole With Tomato Dumplings Recipe
A great change to the boring old casserole A big favorite with my family

Ingredients
  • 600g lean beef chuck steak, cut into cubes
  • 1 onion , chopped
  • 2 celery sticks, chopped
  • 200g mushrooms, quartered
  • 1 cup beef stock
  • 2tbls garlic and herb tomato paste
  • 1 tbls plain flour
  • 1 tbls dried thyme
  • 11/2 cups self raising flour
  • 40g reduced fat spread
  • 20g sun dried tomatoes [ not in oil], soaked in boiling water drained and chopped.
  • 1/2 cup skimmed milk
  • 1tbls fresh flat lef parsley chopped
  • 1 bunch wild rocket leaves to serve

Directions
  1. Preheat oven to 170c . Spray a large non-stick fry pan with oil and heat on high.cook the beef for 4m until browned. Transfer to a 1.5l [6cup] casserole dish.
  2. Add onion, celery and mushrooms, cook stirring, for 5m until soft. Combine tomato past and plain flour in a small bowl. Add to onion mix, stirring continuously Cook for 1m. add the stock and thyme. Stir to combine
  3. Spoon oin mix into cassorle dish,Stir to combine. Cover tightly. Bake for 1n 30 min
  4. Sift the self raising flour into a large bowl. Using your finger tips, rub in the spread until the mix resembles fine breadcrumbs.Stir in sun dried tomatoes and parsley. Make a well in centre.. Pour in the milk. Using a round bladed knife mix until a sticky dough forms
  5. Drop 1 tbls dollop's of mix evenly over casserole to cover. Bake un covered for 20m until dumplings are golden
  6. Serve wth the rocket leaves
