you can alter the taste of this light angel food cake by changing the flavoring from vanilla to maybe almond, bourbon or white rum.. this recipe is from the Biscuits, Spoonbread, and Sweet Potato Pie cookbook

  • 3/4 cup flour
  • 1/3 cup cocoa
  • 1/3 cup sugar
  • 1/4 teasp. salt
  • 1 1/2 cups egg whites ( about 10) at room temperature
  • 1 teasp. cream of tartar
  • 1 cup sugar
  • 1 teasp. vanilla
  • 1/2 teasp. almond extract

Directions
  1. sift together the flour, cocoa, 1/3 cup sugar, and the salt...
  2. sift 3 times
  3. beat egg whites with the cream of tartar and the flavoring ,slowly at first increase the speed
  4. when the whites are quite frothy slowly sift in the sugar, beating hard until firm peaks form
  5. slowly sift the flour mixture over the whites, folding constantly and gently until it's smooth
  6. turn into an ungreased tube pan
  7. bake in a preheated oven at 325'F for 50 minutes or until the cake is brown and is slightly resistant to the touch
  8. cool in the pan inverted over a rack
  9. when cool loosen the sides with a thin knife
  10. serve at room temperature
  11. optional: you can cut the cake into 3 layers and ice between the layers with Two Whiskey Chocolate Mousse or other fillings..
