How to make it

  • sift together the flour, cocoa, 1/3 cup sugar, and the salt...
  • sift 3 times
  • beat egg whites with the cream of tartar and the flavoring ,slowly at first increase the speed
  • when the whites are quite frothy slowly sift in the sugar, beating hard until firm peaks form
  • slowly sift the flour mixture over the whites, folding constantly and gently until it's smooth
  • turn into an ungreased tube pan
  • bake in a preheated oven at 325'F for 50 minutes or until the cake is brown and is slightly resistant to the touch
  • cool in the pan inverted over a rack
  • when cool loosen the sides with a thin knife
  • serve at room temperature
  • optional: you can cut the cake into 3 layers and ice between the layers with Two Whiskey Chocolate Mousse or other fillings..
