Another one of my many fudge brownie recipes. They're great warm with a huge scoop of ice cream.

Ingredients
  • 1 1/3 cups all purpose flour
  • 2 cup sugar
  • 3/4 cup baking cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs-lightly beaten
  • 2/3 cup vegetable oil
  • 1 tablespoon instant coffee
  • 2 teaspoons vanilla extract
  • 1 cup chopped nuts-optional
  • 1 cup chocolate chips-optional

Directions
  1. Preheat oven to 350 degrees.
  2. Grease a 9" x 13 x 2" baking pan. Set aside.
  3. In a large mixing bowl,combine flour,baking powder,salt,sugar,and cocoa. Add nuts and chocolate chips if using. Mix well.
  4. In another bowl,combine eggs,oil,coffee,and vanilla. Add to flour mixture. Stir until well combined. Do not overmix.
  5. Spread batter into prepared pan.
  6. Bake 20-25 minutes.
  7. You may test with a toothpick but may not come out completely clean. Do not overbake.
  8. Cool completely or until slightly warm.
  9. Cut into squares and serve.
