Spicy Saucy Beef and Been Rice Dish

- 2 lbs ground beef. shopping list
- 1 can of beans, or 1 1/2 cups cooked dry beans. shopping list
- 3 cups cooked rice (I use jasmine). shopping list
- 1/2 jar of chunky hot salsa. shopping list
- 1/2 can of stewed, sliced, crushed OR diced tomatoes. shopping list
- 1/2 onion chopped thick. shopping list
- 1 clove of garlic, minced. shopping list
- 2 cups any color bell peppers, optional. shopping list
- spices of your choice. shopping list
How to make it
- Brown beef in a skillet. Drain, and then return to the skillet and simmer garlic & onions with the beef on LOW until the onions are translucent, but still a little firm. Add peppers if you chose to use them.
- Add beans and cook for a few min.
- Pour in salsa and tomatoes. Simmer.
- Add basil, cumin, oregano, garlic powder, and a touch of rosemary to the pan. You can add or subtract spices here, or even use none of them and add your own variation.
- Simmer until bubbling and hot.
- You can either add the cooked rice in with everything, or pour the beef/bean dish over over rice. Or, you can skip the rice altogether. Your choice.
