Spicy Saucy Beef And Been Rice Dish Recipe

This is a VERY cheap, easy and filling dish. Spicy and chunky, this is an American rendition on a Spanish yet almost Italian dish. I make this for my fiance and I at least twice a month.

Ingredients
  • 2 lbs ground beef.
  • 1 can of beans, or 1 1/2 cups cooked dry beans.
  • 3 cups cooked rice (I use jasmine).
  • 1/2 jar of chunky hot salsa.
  • 1/2 can of stewed, sliced, crushed OR diced tomatoes.
  • 1/2 onion chopped thick.
  • 1 clove of garlic, minced.
  • 2 cups any color bell peppers, optional.
  • Spices of your choice.

Directions
  1. Brown beef in a skillet. Drain, and then return to the skillet and simmer garlic & onions with the beef on LOW until the onions are translucent, but still a little firm. Add peppers if you chose to use them.
  2. Add beans and cook for a few min.
  3. Pour in salsa and tomatoes. Simmer.
  4. Add basil, cumin, oregano, garlic powder, and a touch of rosemary to the pan. You can add or subtract spices here, or even use none of them and add your own variation.
  5. Simmer until bubbling and hot.
  6. You can either add the cooked rice in with everything, or pour the beef/bean dish over over rice. Or, you can skip the rice altogether. Your choice.
