Pasta Primavera Salad

- 1/2 cup packed fresh basil leaves,or 2 tsp dried basil shopping list
- 3 tblsp olive oil shopping list
- 2 tblsp fresh lemon juice shopping list
- 1tblsp Djon mustard shopping list
- 2 tsp grated lemon zest shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 1/4 tsp red pepper flakes shopping list
- 1/2 lb egg noodles shopping list
- 3 garlic cloves,peeled shopping list
- 1 10oz package frozen peas shopping list
- 1 10oz package frozen asparagus spears shopping list
- 4 med plum tomatoes,coursely chopped shopping list
- 2 tblsp grated parmesan cheese shopping list
How to make it
- In a large serving bowl,whisk together the basil,oil,lemon juice,mustard,lemon zest,salt,blasck pepper,and red pepper flakes.
- set the dressing aside
- In a large pot of boiling water,cook the egg noodles with whole garlic until noodles are al dente.
- Put the peas and asparagus in a colander.
- When noodles are doner,drain them with the garlic in the colander
- (hot water will thaw the vegetables)
- Rinse the noodles,garlic,and vegetables under cold running water and drain well
- Cut asparagus into 1 ins pieces
- Press garlic cloves through a garlic press(or mash with a fork) and add them top the dressing.
- whisk to blend well
- add noodles and peas,asparagus,tomatoes,scallions and parmesan to serving bowl
- toss well to coat with dressing.
