Ingredients
  • Leftovers if you can of the following:
  • several cooked potatoes, cubed or sliced
  • 1 large onion
  • few cloves of garlic
  • 1 large red or green bell pepper thin sliced or chopped
  • meats such as sausage, bacon, salami, bologna cubed or chopped up
  • additions even to include: leftover fried mushrooms even canned mushrooms, cubed cheese ( add in with the eggs during last stage of cooking ) fresh herbs as you like
  • 6 large eggs
  • salt, pepper, parsley, parika to taste, hot sauce if you love it.
  • oil to saute

Directions
  1. In a heavy duty skillet heat oil and saute onion and peppers untill softened and tender.
  2. Add garlic and cook and stir a few minutes.
  3. Add potatoes and cook and stir till browned.
  4. Cook and stir in the meats till hot and browned
  5. Season to taste.
  6. Fork scramble the eggs and stir and cook and turn into mixture in pan.
  7. Serve as a side or as a main course if you wish
