A family favorite of a great use of leftovers to make this hearty dish many people may not of heard of ! Orginally to denote a meat and potato stew the recipes varies, each family makes it different! Ours is a great combinations of stuff we like. Read more Kinda like glorified hash browns ! Unusual name but wonderful side for brunch- Guys especially love this stuff. Ingredients
- Leftovers if you can of the following: shopping list
- several cooked potatoes, cubed or sliced shopping list
- 1 large onion shopping list
- few cloves of garlic shopping list
- 1 large red or green bell pepper thin sliced or chopped shopping list
- meats such as sausage, bacon, salami, bologna cubed or chopped up shopping list
- additions even to include: leftover fried mushrooms even canned mushrooms, cubed cheese ( add in with the eggs during last stage of cooking ) fresh herbs as you like shopping list
- 6 large eggs shopping list
- salt, pepper, parsley, parika to taste, hot sauce if you love it. shopping list
- oil to saute shopping list
How to make it
- In a heavy duty skillet heat oil and saute onion and peppers untill softened and tender.
- Add garlic and cook and stir a few minutes.
- Add potatoes and cook and stir till browned.
- Cook and stir in the meats till hot and browned
- Season to taste.
- Fork scramble the eggs and stir and cook and turn into mixture in pan.
- Serve as a side or as a main course if you wish
