- 1 jar grape leaves shopping list
- 1 lb ground turkey, beef, or lamb (I usually use turkey) shopping list
- 2 servings rice (Minute rice or Japanese style rice is best) shopping list
- 3/4 cup finely chopped onions or shallots shopping list
- 2 tsb chopped black olives shopping list
- 1/4 cup minced garlic shopping list
- 2 tbs olive oil shopping list
- 1 cup chopped celery (finely chopped spinach, chopped roasted peppers, or roasted tomatoes work well too) shopping list
- 1 cup chopped cilantro, parsley or basil shopping list
- 1/3 cup graded parmesan cheese (optional) shopping list
- 2 tbs lemon juice shopping list
- 1 tsp coriander shopping list
- 1 tsp garam masala shopping list
- 1 tsp turmeric (optional) shopping list
- 1 tsb paprika shopping list
- salt and pepper to taste along with any other spices your prefer shopping list
How to make it
- Cook the onions and olive oil in a skillet over low-medium heat
- When the onions begin to caramelize add the garlic and increase the heat
- When the garlic begins to brown remove from heat and set aside in a large bowl. This will become the stuffing for the grape leaves.
- Cook the rice and add to bowl
- Brown the meat in the skillet. Drain any excess oil and add to the bowl
- Add remaining ingredients & spices to bowl
- Mix the ingredients in the bowl well with a large spoon
- Lay out several grape leaves
- Place 1 tsp to 2 tbs of the stuffing on each grape leaf, depending on the side of the leaf
- Fold in the sides and roll the leaf tightly around the stuffing
- Repeat until all the stuffing is used
- Place rolled leaves in a baking pan lightly coated with olive oil
- Spray or brush the top of the stuffed leaves with olive oil
- Cover with foil and bake at 350 for 20 minutes
- Remove foil and bake for 5 more minutes
- Tip: Roll the leaves tightly. Use 2 leaves together if they are small or have holes. The stuffed leaves should be able to be picked up easily and not mushy, like the way they are often served.
- This is a very versatile recipe. Add cooked lentils & leave out the turkey & beef for a vegetarian meal.
- This makes a great main course too!
