Blueberry Blintz Souffle Recipe
These are incredible. I serve these when we have overnight guests that I want to impress. Good for breakfast, brunch or dessert. Enjoy.

Ingredients
  • 8 frozen blueberry blintzes
  • 1/4 pound melted butter
  • 6 eggs
  • 1 pint sour cream plus extra for garnish
  • 2 teaspoons vanilla
  • 4 tablespoons orange juice
  • 4 teaspoons powdered sugar
  • 2 teaspoons salt
  • 4 teaspoons fresh blueberries

Directions
  1. Place frozen blintzes in a casserole dish the cover with melted butter.
  2. Combine remaining ingredients then pour over blintzes and bake at 350 for 55 minutes.
  3. Serve with additional sour cream and fresh blueberries over the top.
