Tennessee Hummingbird Cake Recipe
This is a very rich, very elegant, very impressive cake sure to please all.

Ingredients
  • 3 cups all purpose flour
  • 1-1/2 teaspoons vanilla
  • 2 cups granulated sugar
  • 8 ounce can crushed pineapple undrained
  • 1 teaspoon salt
  • 2 cups chopped pecans divided
  • 1 teaspoon baking soda
  • 2 chopped bananas
  • 1 teaspoon ground cinnamon
  • 3 eggs beaten
  • 1-1/2 cup salad oil
  • Frosting:
  • 16 ounces cream cheese softened
  • 1 cup butter softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla

Directions
  1. Combine dry ingredients in a large mixing bowl then add eggs and salad oil stirring until dry ingredients are moistened.
  2. Do not beat.
  3. Stir in vanilla, pineapple, 1 cup pecans and bananas.
  4. Spoon batter into 3 well greased and floured cake pans.
  5. Bake at 350 for 25 minutes.
  6. Cool in pans for 10 minutes then remove from pans and cool completely.
  7. Spread frosting between layers and on top and sides of cake.
  8. Sprinkle with 1 cups chopped pecans.
  9. To make frosting combine cream cheese and butter then cream until smooth.
  10. Add powered sugar beating until light and fluffy then stir in vanilla.

NICE POST. I HAVE THE SAME RECIPE. IT CAME FROM SOUTHERN LIVING MAGAZINE IN THE 70'S. WHAT MAKES YOURS TENNESSEE? I WOULD LOVE TO MAKE MINE LOUISIANA! HA!
