Tennessee Hummingbird Cake

- 3 cups all purpose flour shopping list
- 1-1/2 teaspoons vanilla shopping list
- 2 cups granulated sugar shopping list
- 8 ounce can crushed pineapple undrained shopping list
- 1 teaspoon salt shopping list
- 2 cups chopped pecans divided shopping list
- 1 teaspoon baking soda shopping list
- 2 chopped bananas shopping list
- 1 teaspoon ground cinnamon shopping list
- 3 eggs beaten shopping list
- 1-1/2 cup salad oil shopping list
- Frosting: shopping list
- 16 ounces cream cheese softened shopping list
- 1 cup butter softened shopping list
- 4 cups powdered sugar shopping list
- 2 teaspoons vanilla shopping list
How to make it
- Combine dry ingredients in a large mixing bowl then add eggs and salad oil stirring until dry ingredients are moistened.
- Do not beat.
- Stir in vanilla, pineapple, 1 cup pecans and bananas.
- Spoon batter into 3 well greased and floured cake pans.
- Bake at 350 for 25 minutes.
- Cool in pans for 10 minutes then remove from pans and cool completely.
- Spread frosting between layers and on top and sides of cake.
- Sprinkle with 1 cups chopped pecans.
- To make frosting combine cream cheese and butter then cream until smooth.
- Add powered sugar beating until light and fluffy then stir in vanilla.
