How to make it

  • Combine dry ingredients in a large mixing bowl then add eggs and salad oil stirring until dry ingredients are moistened.
  • Do not beat.
  • Stir in vanilla, pineapple, 1 cup pecans and bananas.
  • Spoon batter into 3 well greased and floured cake pans.
  • Bake at 350 for 25 minutes.
  • Cool in pans for 10 minutes then remove from pans and cool completely.
  • Spread frosting between layers and on top and sides of cake.
  • Sprinkle with 1 cups chopped pecans.
  • To make frosting combine cream cheese and butter then cream until smooth.
  • Add powered sugar beating until light and fluffy then stir in vanilla.

    NICE POST. I HAVE THE SAME RECIPE. IT CAME FROM SOUTHERN LIVING MAGAZINE IN THE 70'S. WHAT MAKES YOURS TENNESSEE? I WOULD LOVE TO MAKE MINE LOUISIANA! HA!
