How to make it

  • Break lettuce into a large bowl and season with salt and pepper.
  • Add remaining ingredients to bacon fat in frying pan.
  • Bring this to a boil stirring constantly then pour over the lettuce.
  • Toss lightly with salad fork and spoon until the lettuce is wilted.

    My recipe for wilted lettuce (been in the family for at least 150 years) is very similar to this. This one is Pennsylvania Dutch/German/Swiss for sure. The secret is that there are equal parts sugar and cider vinegar. Iceberg lettuce works very well as long as it is room temperature to start.
