Ingredients

How to make it

  • In large bowl, with kitchen shears, snip coarse chunks of partially thawed spinach
  • Do not drain the spinach
  • Add the cottage cheese, butter, Velveeta and slightly beaten eggs, black pepper
  • Mix well
  • Pour into a 2 quart buttered shallow casserole*
  • Sprinkle with Parmesan cheese
  • Sprinkle with Cayenne pepper
  • Bake at 350 for 1 hour
  • * AT THIS POINT, MAY ADD SLICED ROMA TOMATOES TO TOP OF CASSEROLE IN DECORATIVE MANNER

    Sounds great....Could I use ricotta rather than cottage cheese?..My guy won't go near cottage cheese....:)
