Spinach Fanfare In Casserole Recipe
This is a special spinach casserole, and it's a wonderful addition to a buffet or party table. Goes very well with baked chicken and meats. Nice presentation.

Ingredients
  • 1 package frozen leaf spinach
  • 1 (2 pound) carton cottage cheese, large curd
  • 1 stick unsalted butter, melted
  • 3 tablespoons minced onion
  • 1/2 pound Velveeta cheese, cut into small chunks
  • 6 whole eggs, slightly beaten
  • Black pepper
  • Cayenne pepper
  • Parmesan cheese
  • SLICED ROMA TOMATOES, OPTIONAL

Directions
  1. In large bowl, with kitchen shears, snip coarse chunks of partially thawed spinach
  2. Do not drain the spinach
  3. Add the cottage cheese, butter, Velveeta and slightly beaten eggs, black pepper
  4. Mix well
  5. Pour into a 2 quart buttered shallow casserole*
  6. Sprinkle with Parmesan cheese
  7. Sprinkle with Cayenne pepper
  8. Bake at 350 for 1 hour
  9. * AT THIS POINT, MAY ADD SLICED ROMA TOMATOES TO TOP OF CASSEROLE IN DECORATIVE MANNER

Sounds great....Could I use ricotta rather than cottage cheese?..My guy won't go near cottage cheese....:)
