Norwegian Blueberry Soup

- 1 envelope unflavored gelatin shopping list
- 1/4 cup cold water shopping list
- 4 cups fresh orange juice shopping list
- 3 tablespoons fresh lemon juice shopping list
- 1/4 cup sugar shopping list
- 2 cups fresh blueberries -- washed shopping list
- fresh mint for garnish (optional) shopping list
- heavy cream for garnish (optional) shopping list
How to make it
- Soften gelatin in cold water in a custard cup.
- Place in a pan of hot (not boiling) water until melted and ready to use.
- Combine juices and sugar with melted gelatin.
- Stir until sugar and gelatin are dissolved.
- Chill until mixture begins to thicken.
- Fold blueberries into mixture.
- Lightly mashing but leaving some berries whole.
- Chill until ready to serve. Spoon into chilled bouillon cups.
- Garnish with fresh mint and a drizzle of heavy cream.
