A tangy pang to an old family favorite. Great for those summer days when you just do NOT want to turn on the oven!

Ingredients
  • 5 - 6 Celery Stalks
  • 2 Carrots
  • 1/2 cup Walnuts
  • 3/4 cup Raisins
  • Good sized chunk fresh Ginger
  • 1/3 cup Light Mayo
  • 1 - 2 Tbs Lemon Juice

Directions
  1. Chop the celery and carrots into bite-sized pieces
  2. Grate the ginger
  3. Dump all ingredients into bowl and stir!
  4. ------------------------------------------------------
  5. If desired, place the salad into the fridge for about an hour to let the flavors meld.
  6. For extra umph, try adding grapes cut in half and/or diced apples.
