Celery Ginger Summer Salad

- 5 - 6 celery Stalks shopping list
- 2 carrots shopping list
- 1/2 cup walnuts shopping list
- 3/4 cup raisins shopping list
- Good sized chunk fresh ginger shopping list
- 1/3 cup Light Mayo shopping list
- 1 - 2 Tbs lemon juice shopping list
How to make it
- Chop the celery and carrots into bite-sized pieces
- Grate the ginger
- Dump all ingredients into bowl and stir!
- ------------------------------------------------------
- If desired, place the salad into the fridge for about an hour to let the flavors meld.
- For extra umph, try adding grapes cut in half and/or diced apples.
