How to make it

  • Preheat oven to 350° F.
  • Mix all ingredients, except spinach and cheese, in a large bowl.
  • Stem and cook the spinach (or thaw, if frozen) and squeeze dry, and chop finely.
  • Cover a rimmed baking sheet with a piece of waxed paper. On the waxed paper, shape the meat mixture into a neat rectangle about 9 inches by 13 inches, keeping the thickness as even as possible. Spread the chopped spinach over the meat. crumble the cheese and distribute over the spinach..
  • Starting from a short side, use the waxed paper to help roll up the meat, jelly-roll fashion, into a log. With moistened fingers, press and pat the ends shut and seal up any cracks that develop.
  • Slide the waxed paper away from the meat log and bake in preheated oven about 45 minutes, or to 160° at the center.
  • Remove from oven and let stand a few minutes to firm up, then cut into thick slices and serve.
  • TIP: Use the extra space on the baking sheet to roast potatoes or other root vegetables, cut into 1" cubes, along with the meatloaf.

    I am telling you now Dariana, this is THE BEST MEATLOAF RECIPE I HAVE EVER TASTED!!!! I only had beef mince on hand but can't imagine how amazing this would taste with other meats as well!!! I was unsure about how basic the meat mixture is, and was tempted to substitute or add more ingredients...... My recommendation - DON'T! This recipe is perfect just the way it is! The meatloaf is simple and delicious and when combined with the rich fillings it was a perfect match and complemented each other so well! Girls/guys ;P Follow this to the letter and you will have everyone raving about this meal! Now that I've made it this way, my mind is starting to ponder what else I could roll up inside my meatloaf...... This recipe took reliable boring old meatloaf to a GOURMET level!!! And if you're careful with the rolling and wait a while to slice, the presentation of the layers looks magnificent! I did the roast potatoes just like you said and they turned out just incredible! I haven't seen my husband eat so many roast potatoes for a long time!!! At first I thought the rolling with the baking paper part would be very difficult but it was super easy! PLEASE TRY THIS RECIPE IF YOU FEEL LIKE A MEATLOAF, YOUR LOVED ONES WILL WORSHIP YOU FOR IT!!!!!! I give this recipe 8 points out of 5! LOL
