Hips Hotburger Steak

- 1 lb ground beef shopping list
- 1 oz grated or thinly sliced cheddar cheese. shopping list
- 2 drained, seeded and minced or thinly sliced Jalapeños chilies shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon ground black pepper shopping list
How to make it
- Note: For decades there existed an eating establishment in San Antonio, Texas, call Little Hip's. Inside there was a long bar and on the opposite wall a row of booths. Each booth had a small nickelodeon with music selections from the 40s, such as Gene Autry singing "Back in the Saddle, Again." The motif was Christmas, circa 1940's, which remained in place all year; year in and year out. There was an electric train that ran on a track all around the bar and eating booths. One of Hip's specialities was a grilled Hip's Hotburger Steak and fries. The steak was about a third to a half, of a pound of ground beef, stuffed with Jalapeño chile and cheddar cheese. It was absolutely delicious!
- For each steak form two similar circular patties using a third to a half of a pound of ground beef.
- Form a slight depression in the bottom patty and add grated or very thin sliced cheddar cheese and minced or thinly sliced Jalapeño chiles.
- Press this into a thin single thickness in the center of the patty. Don't use too much cheese or it will run out when melted.
- Place the top patty on over the bottom patty and press the patties flat forming one stuffed patty. be sure to seal the edges of the two halves.
- Season with salt and pepper.
- Now, grill the stuffed patty being careful not to break it.
- Serve with hot French Fried potatoes and a lettuce and tomato salad.
