Orange Pecan Chicken Recipe
This is a delicious chicken recipe that I have made for turkey-haters for Christmas dinner. The sauce gets gooey and sticks to the meat. It is really delightful served with wild rice!

Ingredients
  • 8 small chicken breasts, boneless skinless is great
  • 1/2 cup melted butter
  • salt and pepper
  • Sauce:
  • 1 tbsp. grated orange rind
  • 1 1/2 cup orange juice
  • 14 oz. can pineapple tidbits
  • 1 cup raisins
  • 3/4 cup chopped pecans
  • 1/2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 2 tbsp. flour
  • 1/4 cup water
  • 2 tsp. soya sauce

Directions
  1. Heat oven to 400 F. Dip meat in butter and place on cookie sheet with sides. Bake at 400 F for 20 minutes and then reduce the oven to 350.
  2. Sauce:
  3. Measure next 7 ingredients into a saucepan. Bring to a boil stirring. Pour over chicken on cookie sheet and bake 30 minutes more.
  4. Transfer meat to a platter and cover to keep warm. Pour the sauce from the cookie sheet into the saucepan. Mix flour, water and soya sauce until smooth and add to sauce. Cook over medium-high heat until very thick. Pour over meat.
