  • 1 Ib. lean ground beef
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1/2 red pepper, chopped, optional
  • 1 tsp. salt
  • 1 1/2 tsp. chili powder
  • 1 tsp. dried basil leaves
  • 2 cloves garlic, minced or pressed
  • 1 can (8 oz.) kidney beans, drained, reserve liquid
  • 1 can (7 oz.) Mexican-style (or whole kernel) corn, drained
  • 1/3 cup whole pitted olives
  • 1/4 cup chopped parsley

Directions
  1. Brown meat in a large, heavy skillet over medium heat. Stir with a wooden spoon to break into small pieces.
  2. Add onion, green pepper and red pepper, if used. Cook until vegetables are tender-crisp.
  3. Gently stir in salt, chili powder, basil, garlic, beans and corn.
  4. Simmer for 5 to 10min. to blend flavors. Stir in some of the reserved bean liquid if you want to increase moistness.
  5. Gently stir in the olives and parsley.
  6. Heat through and serve.
