Ingredients
  • 1/3 cup oil
  • 1/2 cup flour
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1/4 cup ground New Mexico chilies
  • 1 cup cold water
  • 3 cups chicken broth
  • 1 clove garlic minced

Directions
  1. Heat oil in a small saucepan then add flour to make a roux then mix until blended well.
  2. Cook until roux turns golden about 15 minutes.
  3. In medium cooking pan mix cumin, Onion powder and ground chile.
  4. Add 1 cup cold water and stir until lump free.
  5. Add chicken broth and cook on medium heat.
  6. Add roux when ready and stir quickly to avoid lumps.
  7. Simmer until thickened stirring frequently to avoid lumps.
  8. Add garlic and simmer on low 15 minutes.
