Ingredients

How to make it

  • night before- chop rabbit into equal size pieces ( I cut the rabit into 6 pieces) scrape carrot, wash onion and celery and mince finely.
  • place rabbit and veggies in a zip lock bag add bay leaf and wine , mix well and refrigerate.
  • 2 hours before serving time, heat evoo and butter in a heavy bottom pot.
  • shake off rabbit and brown on all sides.
  • add marinade, season and simmer,over low heat, covered, stiring once in a while. until rabbit is done-meat is ready to fall of the bone.
  • the sauce will be quite thick
  • remove meat and pour sauce in a blender and belnd until well chopped, not pureed.
  • pour sauce over rabbit and serve.

    Hi there Bob. Well, I'm like Jenniferbyrdez and I cannot bring myself to eat cute little bunnies. Nope, just can't do it. I do like your recipe though and like Jennifer said, chicken will have to do ;-)

    P.S. OH MY GOSH!!! I just noticed the cat part. My poor cousin was served cat in China along with snake and monkey brains. She couldn't touch any of it and unfortunately by doing so, she insulted the host. I think I'll stick to meat and potatoes ;)

    Cooking cat? OMG...sounds kinda Chinese...is that a joke? Sure had me laughing. At any rate I LOVE to eat rabbit..when I can get it...but I do feel a little guilty. I quit eating veal because that is a really sad way to get a nice piece of meat. Your recipe sounds yummy.

    I'm surprised more folks don't eat rabbit. It's such a nicely flavored and textured meat.
    I like the veggie and seasoning mixture here. I think a baked potato on the side, with sour cream, would fit right in. Thanks.
