Ingredients
  • 16 oz new potatoes, cut in halves
  • 4 medium carrots, cut into bite-sized pieces
  • 4 Tbsp olive oil
  • 2 Tbsp Dijon mustard
  • 2 Tbsp whole grain mustard
  • 4 Tbsp honey
  • 2 cloves garlic, finely chopped
  • Freshly ground black pepper
  • 32 oz pork roast loin or shoulder
  • 4 shallots, peeled and sliced lengthwise
  • 1 oz fresh sage, roughly chopped

Directions
  1. Preheat oven to 325F.
  2. Cook potatoes and carrots in boiling water for 5 minutes and drain thoroughly.
  3. Mix together olive oil, mustards, honey and garlic, then season with black pepper to taste.
  4. Place pork in roasting pan.
  5. Arrange the vegetables around the pork.
  6. Spoon the mustard mixture over the pork.
  7. Sprinkle with sage.
  8. Bake for 45 minutes or until pork is thoroughly cooked without any pinkness and vegetables are tender.
  9. Remove from pan and let roast rest on carving board.
  10. Place vegetables in a serving dish and leave juices in pan.
  11. To make gravy:
  12. Pour juices in to a sauce pan and add 2 Tbsp boiling water.
  13. Stir until boiling on medium heat.
  14. Serve over sliced roast.
